The Factory experiments not only with its' artistic commercial ventures but with its dining menu too. Their chef, native Californian Sean Jorgensen enthuses over a childhood spent in his Grandma's South Georgia kitchen. "Soul food. I wanted the chance to create Soul food!" he says, while describing his Low Country Shrimp Jambalaya served over a bed of Mango Fried Rice (95RMB). Even for someone who doesn't usually enjoy seafood platters I can't disagree. Following on from a run at Finestre on the Bund, Sean's concept at the Factory is now inspired by a healthy and creative lifestyle. Seasonal organic ingredients and what looks good at market each day, coupled with the chef's creative whim, determines how the food evolves. The menu is short, focused, and frequently changed with modern, natural seasonal flavors. The Factory hopes to nurture the idea that they are a "creative club" not just a standard restaurant and encourage guests to think about the food, with a ‘Let's see what they are cooking tonight' attitude.
The King Fish in Cuba-Libre Sauce (45RMB) was fresh and tasty and the Shitake Risotto Stuffed Calamari with Charred Tomato (35RMB) was a treat. Desserts are again homemade deep Southern recipes adapted from Grandma's kitchen and brought over to Shanghai via a run in the hot and overworked kitchens of a Parisian restaurant. The result is an eclectic and colorful menu. Their inspired dining promises to bring more original and interesting content in the future.

The wine list is carefully selected, driven by recommendations and regular revisions. They aim to keep it accessible by presenting a list that appeals to all levels from the wine novice to the connoisseur alike. The cocktails menu is original concoctions next to well-made classics made using top quality ingredients. The overall theme will be delicious, strong drinks at a good price-point that draw on old and new Shanghai for inspiration.

Additionally, every Sunday at 7pm they run their film forum nights, showcasing a different movie or documentary each week. Prices vary but are always an excellent value and include a buffet.

The Bottom Line: Inspired fresh dining in a creative environment. The Factory is great value and a unique dining experience.
