What made you want to open an izkaya-style eatery in Shanghai? A particular love of Japan?

Actually, it happened to be that I met my girlfriend who is Japanese in Shanghai. Also, I have several business partners that are Japanese. At the same time, I am a big fan of Japanese cuisine and we go to Japan for food with my girlfriend quite often.

Prior to this project, you've participated in the creation of a Spanish eatery and a cocktail haven. How do you decide what projects you want to work on?

I basically only get involved in projects that are exciting in the sense of the concept, challenge or interesting opportunities. I only accept projects that are in a long-term, solid basis with serious people involved.

We've seen some very amusing images of you worshipping food. Are you some sort of culinary messiah?

Not at all, I just love and live for food!

If you had to say there was one ingredient that you came back to again and again from pure love of its taste, what would it be?

Iberian Ham.

Is there any "sexy news" we should know about coming up over the next few months?

There will be a few "sexy happenings", like a cooking book that will come out during the first quarter of the year.

When you're not penning recipes, what do you do to enjoy Shanghai?

I like to gather with friends and go to experience different restaurants.
